The Efficiency of Chitin and Chitosan of Shell Waste of Manta Shrimp (Squilla Sp.), Squid (Sepia Sp.) and Blue Crab (Callinectes sapidus, Rathbun, 1896)

Chitin and chitosan production was carried out by a chemical method. Inthestudy, moisture%, nitrojen content%, crudeash% andcrudelipid% of thewasteshell, chitin and chitosan were also analyzed. Theefficiency of chitin and chitosan of the shell waste of mantashrimp, squid and blue crab was determined as %14.89 with %12.52, %2.87 with %1.69 and %10.21 with %7.55 respectively. Consequently, it is determined that theefficiency of chitin and chitosan of mantashrimp and bluecrab is significiantly higher than the efficiency of squid fish bone when compared.
